Orchard Chicken Lettuce Wraps
Ingredients
- 1 pound (454 g) cooked chicken breast or rotisserie chicken, shredded (about 4 cups shredded)
- 1/2 medium (75g) red onion, diced
- 1 medium (200g) apple, diced
- 1 cup (100 g) grapes, quartered
- ½ cup (60 g) flaked almonds
- 2/3 cup (165 g) plain Greek yogurt with 2% fat
- 2 tablespoons freshly squeezed lemon juice, or more to taste
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 6 medium-sized lettuce leaves
Directions
In a large bowl, combine shredded chicken, red onion, apples, grapes, almonds, Greek yogurt, lemon juice, garlic powder, salt and pepper. Mix until well combined.
Using a 3/4 cup measuring spoon, portion the chicken salad and serve in lettuce leaves.
