This uncomplicated pack makes healthy eating easier. Simply spread hummus on a whole wheat tortilla and pile the fresh ingredients on top! These keep well in the fridge, so you can prep them for on-the-go lunches or cut them in half for party appetizers.
Zucchini Hummus Chicken Wrap
Ingredients
- 1 cup (140 g) shredded boneless, skinless roast chicken breast
- 1/4 cup (40 g) crumbled feta cheese
- 1 teaspoon chopped fresh oregano
- 1/2 tsp black pepper
- 2 medium zucchini (390 g)
- 1/2 cup (120 g) plain hummus
- 4 (10 inch) whole wheat tortilla
- 2 cups (60g) spinach
- 1/4 cup (30 g) thinly sliced
red onion - 1/4 cup (40 g) sliced
roasted red bell pepper
Directions
Stir together chicken, feta, oregano, and pepper in a large bowl. Set aside.
Trim the ends of the zucchini and slice them lengthwise into thin strips using a vegetable peeler or mandoline.
Spread 2 tablespoons of hummus on each tortilla. Distribute spinach and zucchini evenly over hummus. Divide chicken mixture, onions, and roasted red peppers evenly among tortillas. Roll up tightly; Wrap in plastic wrap and refrigerate until ready to serve.
