Whole wheat cinnamon apple pancakes



These savory pancakes combine oats and white whole wheat flour for 100% whole grain flavor. They can be prepared fluffy and yet somehow retain a seductively creamy consistency inside. A little chopped apple is added to the dough for sweetness, but most of the apple is boiled down for the sweet, fruity topping.

We serve these pancakes with ¼ cup 0% plain Greek yogurt as an additional topping to add up to 19g of protein to this breakfast. This should help keep you full for hours. These pancakes are sweet enough and shouldn’t need any syrup if you want to start your day with a balanced meal.

Whole wheat cinnamon apple pancakes

Ingredients

  • 2 medium Gala or Honeycrisp apples, peeled and cored
  • 2 tbsp unsalted butter
  • 2 tbsp maple syrup
  • 1 1/4 teaspoons ground cinnamon, divided
  • 3/4 cup (90 g) white whole wheat flour
  • 2/3 cup (60 g) quick-cooking oatmeal
  • 2 tsp baking powder
  • 2 tsp sugar
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 2 cups (235g) 0% plain Greek yogurt, divided
  • 1 tsp vanilla extract
  • 1 large egg

Directions

Halve an apple; Chop half of the apple and set aside. Dice the remaining 1 1/2 apples. Melt butter in a small saucepan over medium heat. Stir in diced apple and 1/4 cup (59 ml) water; Cover and cook until apple is tender, 10-12 minutes. Stir in maple syrup and 1/4 teaspoon cinnamon.

Meanwhile, in a large bowl, stir together flour, oats, baking powder, sugar, salt, baking soda and remaining 1 teaspoon cinnamon. In a medium bowl, whisk together yogurt, remaining 1/2 cup (118 ml) water, vanilla, and egg. Add the yogurt mixture and grated apple to the flour mixture. stir until everything is well mixed.

Heat a large nonstick skillet or skillet over medium-high heat. Pour about 1/4 cup of batter per pancake onto a hot griddle. Cook for 3-4 minutes, until the top is bubbly and the edges look cooked. Flip and cook on the other side for 2-3 minutes, or until cooked through. Top the pancakes with ¼ cup Greek yogurt-apple mixture.
