Prepare ahead of time for healthy eating throughout the week with this easy breakfast. After baking, store in the fridge and simply reheat a piece every morning – 45-60 seconds in the microwave is enough. Then top with fresh berries and enjoy a hearty, slightly sweetened whole grain breakfast.

Vegan cinnamon apple oatmeal
Ingredients
- 2 1/2 cups old-fashioned rolled oats
- 2 tsp ground cinnamon
- 1 tsp baking powder
- 1/2 tsp salt
- 2 1/4 cups unsweetened soy milk
- 2 sweet apples, grated and unpeeled (e.g. Honeycrisp)
- 2 tbsp maple syrup
- 1 1/2 tsp vanilla extract
- 1/2 cup walnuts, chopped
- 2 cups strawberries, sliced
- 1 cup raspberries
- 1 cup blackberries
Directions
Preheat the oven to 375°F (190°C) and lightly coat an 11×7-inch glass baking dish with cooking spray.
In a large bowl, mix together the oats, cinnamon, baking powder and salt. Add almond milk, grated apple, maple syrup and vanilla extract and mix well. Pour the mixture into the prepared baking dish and spread it evenly. Sprinkle the chopped walnuts on top. Bake for about 35 minutes or until the oats are firm and lightly golden brown.
Meanwhile, in a small bowl, gently mix together the strawberries, raspberries and blackberries. Divide into 6 small airtight containers.
Let it stand for 5-10 minutes before cutting into six pieces. Allow to cool completely, then store each piece in an airtight container for easy transportation.
To reheat, microwave for 60-90 seconds or until hot. Top with cold berry mixture and enjoy.
