Turkey Stuffed Peppers



Ground turkey makes an excellent substitute for beef in these stuffed peppers and can serve as a light dinner, filling lunch, or side dish. With less thanWith 345 calories and 33 grams of protein, this is a high-protein dish.

Easy Turkey Stuffed Peppers

Ingredients:

  • 1 tbsp olive oil
  • 450g lean minced turkey meat
  • 1 yellow onion, diced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup (195g) brown rice, cooked
  • 1 15-oz. Can (445g) Italian seasoned diced tomatoes
  • 4 peppers (any color), seeds and tops removed
  • 1/2 cup (57 g) cheddar cheese, grated

Directions:

Preheat the oven to 375°F (190°C).

Heat a large skillet over medium-high heat. Once hot, add the oil. When the oil is hot, add the turkey and onion, season with salt and pepper, and cook over medium-high heat until the turkey is browned and cooked through to an internal temperature of 165°F, about 7 minutes. Add brown rice and tomatoes and cook, stirring frequently, until water has evaporated from tomatoes, about 3 minutes.

Divide the mixture evenly among the peppers and place in a square baking dish. Cover with foil and bake for 25 minutes. Remove foil, top with cheese and bake until cheese is melted, about 5 minutes.
