Served with an antioxidant-rich berry sauce, this French toast recipe is as decadent as it is nutrient-dense. By baking all the French toast at once, you can serve breakfast for the whole family at the same time without having to stand at the stove and finish portions while everyone else is busy working.
The carbohydrates, proteins, and total calories of this breakfast depend on the bread used. If you want to reduce calories or carbohydrates, you can choose a “thinly sliced” bread. However, if you want to consume more protein or have a hearty breakfast, go for a standard-sized whole-grain bread. Sprouted bread also tends to contain more protein than regular bread. Pair this French toast with some scrambled eggs or Greek yogurt for a complete breakfast!

Sheet pan French toast with mixed berry sauce
Servings: 4 | Serving size: 2 slices of bread, 5 tablespoons/74 ml sauce
Ingredients
- 8 slices sprouted whole wheat sandwich bread
- 4 large eggs
- 1/3 cup (83 ml) orange juice, freshly squeezed, divided
- 1 tbsp orange peel, finely grated
- 2 tsp vanilla extract
- 1/2 teaspoon nutmeg, freshly grated
- 1 cup (244 ml) skim milk or non-dairy milk of your choice
- 1 cup (150g) blueberries
- 1 cup (150g) strawberries, sliced
Directions
- Preheat the oven to 230°C (425°F). Generously coat a 13 x 18 inch (33 x 46 cm) sheet pan with cooking spray. Place the bread slices close together in a single layer on the pan.
- In a medium bowl, whisk together the eggs, 1/4 cup (59 ml) orange juice, orange zest, vanilla extract, and nutmeg until fully combined.
- Add the milk and stir.
- Slowly pour the egg mixture evenly over the bread slices. Tilt the pan so the bread absorbs the egg mixture. Bake in the lower third of the oven for 10 minutes until the bottom is brown.
- Meanwhile, make the berry sauce: Combine the berries and remaining orange juice in a medium skillet and cook over medium heat, stirring occasionally, until the fruit begins to break down and the juice is slightly reduced, 2 minutes. Reduce heat to low and keep warm.
- Slide the tray onto the top rack of the oven (15 cm) away from the grill element. Turn oven to broil and broil on high until bread is puffed and browned on top, 1 1/2-2 minutes.
- Serve the French toast with the sauce and enjoy!
