
Salmon is a great source of healthy fats like omega-3 fatty acids. If tomato salsa seems a bit boring for you, try this tangerine salsa, which is in season in the winter. The sweet, tart fruits are juicy and colorful and are perfect as a topping for a hearty salmon fillet. Combine with your favorite whole grains and crunchy vegetables for a delicious, balanced meal!
Fried salmon with tangerine salsa
Ingredients
- 2.4 ounce salmon fillets
- 1 tsp chili powder
- 1/4 tsp kosher salt
- 2 tangerines, peeled and chopped
- 1 jalapeño pepper, chopped
- 2 tbsp spring onion, chopped
- 1 tbsp fresh lime juice
- 2 tablespoons fresh coriander, chopped
Directions
Preheat the oven to 204°C (400°F). Place the salmon fillets, skin side down, on a small baking pan. Mix chili powder and salt in a cup and sprinkle over the salmon. Roast for approximately 12-15 minutes, or until the internal temperature reaches 145°F
To make the salsa, combine the oranges, jalapeño, scallion, lime and cilantro in a small bowl and stir to combine. Makes 3/4 cup salsa.
