Coconut green apple muesli

Muesli is a cold porridge made from oats, fruit and milk or yogurt that can be eaten immediately or left to soften overnight in the refrigerator. However, don’t let this humble dish fool you. Over time, as the granola sits in the fridge, something magical happens and transforms the oatmeal into a soft, creamy and satisfying breakfast.

Coconut green apple muesli

Ingredients

  • 1 1/2 cups (368 g) 0% plain Greek yogurt
  • 1/2 cup (122g/120ml) unsweetened coconut milk
  • ¼ cup (62 g) freshly squeezed orange juice
  • 2 tablespoons light honey or maple syrup
  • ¼ tsp ground cinnamon
  • ⅛ tsp kosher salt
  • 1 cup (80 g) oatmeal
  • ½ cup (46 g) sliced ​​almonds, toasted and unsalted
  • ½ cup (59 g) pepitas, toasted and unsalted
  • 1/2 cup (21 g) grated unsweetened coconut
  • 1 large Granny Smith apple, cored and chopped

Optional side dishes

  • Ground cinnamon for sprinkling
  • Honey or maple syrup for drizzling
  • Roasted coconut flakes
  • Crushed apple
  • Roasted chopped nuts such as almonds, hazelnuts or walnuts

Directions

In a medium bowl, whisk together yogurt and milk with orange juice, honey, cinnamon, and salt. Fold in oats, almonds, pepitas, coconut and apple until well combined. Pour the granola into four 1-cup jars with tight-fitting lids. Store in the refrigerator for at least 1 hour, preferably overnight.

Eat it straight from the jar and garnish with cinnamon, honey, toasted coconut, grated apple or toasted nuts if desired.
