This new version of the original apple salad is a throwback to the Ladies Who Lunch set and was named after the Waldorf Astoria Hotel. It’s full of vitamin C thanks to goji berries and apples.(1, 2) It also contains 30 grams of protein from lean chicken and walnuts.(3, 4) Let the goji berries steep in the orange juice for 10 minutes while you chop the other ingredients to get the best consistency.

RD tip

The walnuts in this perfectly balanced meal contain a type of omega-3 that’s different from the type you find in fish. Therefore, it is a great option if you don’t like or eat fish. (4)

Chicken Waldorf salad

Ingredients

  • 1/4 cup (59 ml) freshly squeezed orange juice
  • 1/4 cup (40 g) dried goji berries or cherries
  • 1/4 cup (59 ml) vegan mayonnaise
  • 1 tsp orange peel
  • 1 tbsp freshly squeezed lemon juice
  • 2 medium (520g) Gala apples, cored and chopped
  • 2 1/2 cups (340 g) chopped fried chicken breasts
  • 2 large celery stalks, thinly sliced
  • 1 cup (150 g) red grapes, halved
  • 1/2 cup (56 g) toasted walnuts
  • 4 cups (80 g) baby greens

Directions

Add orange juice and goji berries to a small measuring cup. Let rest for 10 minutes. so that the goji berries become soft. Skip this step when selecting cherries.

In a large bowl, stir together mayonnaise, orange zest and lemon juice. Add the apples, chicken, celery and grapes and toss to coat the ingredients with the dressing. Add goji berries and orange juice (or dried cherries) and stir. Divide the vegetables among four plates and pour the apple mixture over them. Scatter the walnuts on top and serve.
