In about 20 minutes you can enjoy a fresh, colorful and family-friendly meal. Whole wheat pitas make a fantastic pizza crust; Simply crisp them under the broiler before adding toppings. Here, store-bought hummus and seasoned rotisserie chicken breast are the main toppings, along with a fresh cucumber and tomato salad.
Chicken Shawarma Pita Pizzas
Ingredients
- 4 whole wheat pita
- 1 1/2 cups (170 g) skinless roast chicken breast, shredded
- 3/4 tsp ground cumin
- 3/4 tsp garlic powder
- 1/2 tsp ground turmeric
- 3/4 cup (135 g) tomato, diced
- 3/4 cup (90 g) cucumber, diced
- 1/4 cup (15 g) fresh flat-leaf parsley, chopped
- 1 tbsp fresh lemon juice
- 10 tbsp (150 g) plain hummus
- 1 cup (113 g) part-skim mozzarella cheese, grated
Directions
Preheat the grill to the highest setting.
Arrange pitas on a large baking sheet. Cook for 1-2 minutes on each side until toasted and crispy. Remove from oven (leave grill on).
In a medium bowl, toss chicken with cumin, garlic powder, and turmeric. In another medium bowl, combine tomatoes, cucumbers, parsley and lemon juice.
Spread 2 1/2 tablespoons hummus on each pita. Top each pita with about 1/3 cup chicken and 1/4 cup cheese. Broil until cheese melts and begins to brown, about 2 minutes. Remove from oven. Top each pizza with about 1/3 cup pickle mixture.
