Baklava cookies sweetened with honey

These delicious cookies combine all the flavors you love in the buttery Greek dessert packed into a healthy little oatmeal cookie. Although honey is considered added sugar, it is not refined. Still, it is important to consume it in moderation. Our RD recommends 25g or less of added sugar per day, so with just 5g of added sugar, these cookies make a perfect dessert to fit into a healthy holiday eating plan.

Ingredients

  • 1/2 cup (113 g) unsalted butter
  • 1/2 cup (118 ml) honey
  • 1/2 cup (65 g) walnuts, chopped
  • 1/2 cup (60 g) pistachios, peeled and chopped
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup (60 g) whole wheat pastry flour or whole wheat flour
  • 1/4 teaspoon baking powder
  • 1 1/2 cups (148 g) oats

Directions

Preheat oven to 350°F (177°C). Line two baking trays with baking paper and set aside. Melt the butter in a large skillet over medium-low heat. Continue cooking, swirling the pan occasionally, until the foam subsides and the butter begins to turn golden brown and smell nutty, about 3 minutes.

Add honey, walnuts, pistachios, cinnamon, salt and cloves and bring to a boil. Cook until syrupy, stirring constantly, for about 2 minutes. Pour into a large mixing bowl and let cool to room temperature, about 30 minutes.

Add egg and vanilla to honey mixture and stir. Add the flour and baking powder and mix until there are no remaining flour residues. Add the oats and stir everything together. The mixture will be very stiff.

Drop the dough in rounded tablespoonfuls, 2 inches apart, onto the prepared baking sheets. Bake the cookies halfway through baking, rotating the baking sheets from top to bottom, until crispy around the edges and golden brown (14-18 minutes). Watch the last few minutes carefully to make sure the cookies don’t burn. Transfer to a rack to cool and allow to cool. Store in an airtight container for up to 1 week.
