These nutrient-dense treats are packed with dried apples, toasted nuts, oats, dates and cinnamon. They’re a great, balanced snack with fiber, protein, healthy fats, and whole grains—and they taste like portable apple pie (1,2,3). They’re flavored with coconut, but you can get creative and roll them in chia seeds or hemp seeds, or even turn them into a dessert by dipping them in white chocolate.

Apple Pie Energy Bites
Ingredients
- 1/2 cup (45 g) sliced
almonds - 1/2 cup (45 g) walnuts
- 1/4 cup (22 g) oatmeal
- 3/4 cup (62 g) chopped dried apple slices, lightly packed
- 1/2 cup (106 g) pitted Medjool dates
- 1 1/2 tsp vanilla extract
- 1 teaspoon lemon peel, finely grated
- 1 1/2 tsp ground cinnamon
- 1/4 teaspoon nutmeg, freshly grated
- 1/4 tsp salt
- 1/3 cup (30 g) unsweetened coconut, finely grated
Directions
Preheat the oven to 177°C (350°F). Spread the almonds, walnuts, and oats evenly on a rimmed baking sheet. Roast in the oven until lightly golden brown and fragrant, about 8 minutes. Remove and let cool completely.
In the bowl of a food processor, combine the apples and dates. Pulse until finely chopped. Add the toasted nuts and oats, vanilla extract, lemon zest, cinnamon, nutmeg and salt. Pulse about 30 times until the mixture is finely chopped and begins to clump.
Remove the mixture and roll into 14 balls, about 1 tablespoon each. Roll each ball in shredded coconut to coat.
Store the Energy Balls in an airtight container in the refrigerator for up to 1 month.
Tip: If your dates are dry or tough, soak them in warm water for 5 to 10 minutes to soften them. Drain well before use.
