This parfait makes a great dessert. It satisfies your sweet tooth and contains protein and fiber to keep you full.

Chia pudding, yogurt and berry parfaits to prepare
Ingredients
- 1 1/2 cups (360 ml) unsweetened almond milk
- 1/2 cup (84 g) chia seeds
- 2 cups (490g) 0% plain Greek yogurt
- 2 tbsp honey
- 1 cup (150 g) fresh raspberries (reserve 4 berries for garnish)
- 1 cup (150g) fresh blueberries
- 4 sprigs of mint
Directions
In a bowl or 2-cup storage container, stir together the almond milk and chia seeds, then cover and refrigerate overnight.
Place the Greek yogurt and honey in a medium bowl and stir until smooth. Add the berries and stir until well combined.
To assemble, get 4 1 1/2 cup glass storage containers or large wine glasses.
Add 1/2 cup of the yogurt mixture to each glass. Add 1/4 cup chia pudding to the yogurt and spread evenly. Measure and spread 1/4 cup of the remaining yogurt over the top, then top with about 2 tablespoons of chia pudding. Garnish each with a sprig of mint and a raspberry and serve.
Can be covered and stored in the refrigerator for up to four days.
