Golden overnight oats with blueberries

Here’s an easy breakfast option that’s easy to make the night before and is anti-inflammatory and antioxidant-rich thanks to turmeric, ginger, and blueberries (1, 2, 3). Whole-grain oatmeal doesn’t need to be cooked if you stir in your favorite non-dairy milk and let it soak in the fridge for several hours.

RD tip: Combine this with hard-boiled eggs for a quick and easy balanced breakfast that can all be made in advance.

Golden overnight oats with blueberries

Ingredients

  • 2 cups (488 g) unsweetened soy milk
  • 2 tsp ground turmeric
  • 2 tsp freshly grated ginger
  • 1/2 tsp freshly ground black pepper
  • 2 cups (160 g) oatmeal
  • 2 cups (300 g) fresh blueberries

Directions

  1. In a 4 cup (1 L) storage container, combine soy milk, turmeric, ginger, and black pepper. Whisk to combine. Stir in the oats, cover and refrigerate overnight or at least 4 hours.
  2. Stir in the morning and serve garnished with blueberries.
