Lebanese vegetarian kabobs with lemon tahini sauce
Ingredients
- 8 (20cm) bamboo skewers
- 1/4 cup (59 ml) tahini
- 1/4 cup (59 ml) warm water
- 3 tbsp nutritional yeast
- 3 tbsp lemon juice
- 2 medium garlic cloves, finely chopped and mashed, divided
- 1/2 teaspoon salt, divided
- 1 (12 oz./340g) package of Impossible Burger®
- 1 tsp ground cumin
- 1/4 tsp ground cinnamon
- 2 tablespoons parsley or coriander, finely chopped
- 1/2 tsp pepper
Directions
Soak the bamboo skewers in a pot of cold water for 30 minutes; This will prevent them from burning on the grill. You can also use metal skewers that do not need to be soaked. Preheat a grill or grill pan over medium-high heat.
In a medium bowl, stir together tahini, water, nutritional yeast, lemon juice, 1 teaspoon garlic, and 1/4 teaspoon salt. Set aside.
In a large bowl, combine the ground veggie burger, remaining garlic, cumin, cinnamon, parsley, and pepper until well combined. Divide the mixture into 8 portions. Form the portions on the skewers into flat sausage shapes, pressing the mixture to form onto the skewer, leaving the last 2 inches of the skewers uncovered. Before grilling, spray the skewers with olive oil spray.
Grill until skewers are browned on both sides and heated through, about 4 minutes. per page. Serve with the tahini sauce.
