Cauliflower Black Bean Tacos
Ingredients
- 6 corn tortillas
- 4 cups (400g) cauliflower
- 1 tsp olive oil
- 2 cloves of garlic, minced
- 1 tsp chipotle powder
- 1/4 tsp salt
- 1 (15 ounce) can unsalted black beans, rinsed and drained
- 1/4 cup (40 g) green onions, chopped
- 2 large tomatoes, chopped
- 1/4 cup (15 g) cilantro, coarsely chopped
Directions
Preheat the oven to 200°C and wrap the tortillas in foil. Heat the tortillas for 10 minutes.
Place the cauliflower in a food processor and pulse until it is the size of ground beef.
Coat a large skillet with olive oil and place over medium-high heat; Add the cauliflower. Cook, stirring frequently, until the cauliflower is soft and the pan is dry, about 5 minutes. Add garlic, chipotle powder, salt and black beans and cook until hot.
Place 1/2 cup cauliflower filling into each corn tortilla and top with scallions, tomatoes, and cilantro.
