Tartchen- und Kirsch -chia -Pudding
Ingredients
- 1 cup (150 g) cake cherries, frozen
- 1 cup (120 ml) coconut milk
- 1/4 cup (30 g) chia seeds
- 1/4 cup (60 ml) cake cherry juice
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of ground cinnamon
Optional garnings
- Cake dried cherries
- Dark chocolate chips or cocoa nibs (if necessary gluten-free)
Directions
Combine chia seeds, cherry juice and coconut milk in a small bowl. Stir well, then soak the mixture for at least 30 minutes or until the chia seeds absorbed most of the liquid and formed a thick gel.
Transfer the soaked chia mixture to a food processor or a high-speed mixer. Add the remaining ingredients and mix them smoothly and creamy.
Put the pudding in serving shells, glasses or cups. Garnish with chocolate chips and additional Scottish cherries – fresh, frozen or dried – as desired.
Enjoy or relax immediately before serving for a firmer texture.
